Anari Prawn takes its name from "anar" — the Hindi word for pomegranate. We marinate fresh, deveined prawns in a blend of pomegranate extract, thick yogurt, ginger-garlic paste, roasted cumin and a hint of chilli, then skewer and roast them in our tandoor until just cooked through. The result is a prawn that is juicy at the centre with a lightly charred, tangy crust.
Served sizzling with mint chutney and a wedge of lime, it's a bright, lively starter that pairs beautifully with garlic naan or a chilled mango lassi.
