"Achari" refers to the classic Indian pickling masala built on mustard seeds, fennel, fenugreek, nigella and dried red chilli. We marinate fresh, boneless fish fillets in this tangy, aromatic blend with thick yogurt and ginger-garlic, then roast them on skewers in our tandoor until the edges char and the centre stays flaky and moist.
